I have used condensed milk instead of sugar generally it made with sugar alone. The payasam when done should be thin so that when it cools down automatically becomes little thicker. If you like the taste of cloves you can add when you roast nuts. You should surely try this dessert and it will never disappoint you for sure.

INGREDIENTS:

Seviyan(thin)/roasted vermicelli – 125 gms
Milk – 1 litre
Ghee – 2 tbsp
Combined dry fruits -cashews,almonds,chironji(saraparuppu) and dried grapes
Cardamom powder – 11/2 tsp
Condensed milk – 1/2 tin
Chopped dates – 2 tbsp
Sugar – as per taste

METHOD:

1.Keep a thick kadai with milk and add condensed milk to it and let it boil for 5 minutes.

2.Now keep another kadai with ghee add the chopped nuts and roast till golden then add roasted seviyan and stir for a minute switch off.

3.Now add chopped dates to milk and let it boil then add these roasted items to the milk and cook till seviyan is done.

4.When cooked add sugar after tasting the kheer, only if needed.
5. Lastly switch off and add cardamom powder stir and serve.

Ingredients

  • Sugar - as per taste

Instructions

Instead of cardamom powder you can add saffron strands. I have taken roasted seviyan and still I have roasted it a little but its not needed. Keep the payasam little thinner so that when it sets and cools it becomes thick. Instead of condensed milk you can use sugar alone and do this payasam.
