INGREDIENTS:
Grated Coconut(1 whole Coconut) – 3 cups /270 gms
Water – 2 cups/ 500gms
Corn flour – 4 tbsp/30 gm
Condensed milk – 3/4 cup / 240gms
Some crushed pistachios &
Desiccated coconut for garnish

1. First add grated coconut with water grind & squeeze milk.
2. I have used 2 cups of water to extract milk.

3. To a cup add 4 tbsp corn flour add some(1/4 cup) coconut milk stir without lumps & keep.
4. Take a thick bottomed pan add coconut milk let it heat then add corn flour slurry mix.
5. Make sure to whisk the corn flour slurry before adding to the coconut mixture.
6. Keep on stirring .
7. Add condensed milk & mix.
8. Keep the flame medium low let it cook.
10. It will become thick & pourable now switch off the stove.when thick & pourable now switch off the stove.
11. Transfer to a glass cup or a bowl its your choice.
12. Let it cool completely then keep in fridge for 3-4 hours.
13. Take out smooth creamy tasty coconut pudding is ready.
