This a special Karnataka style Akki roti that is very easy to make and tastes totally delicious. Its made with rice flour with some simple ingredients going in.The wonderful herb I would say that goes in is sabakki soppu that is dill leaves. Unfortunately I did not have it in hand so added some finely chopped coriander leaves. Every thing added should be finrely chopped so that it becomes easily spreadable.The dough should be pliable and soft so that we get a very nice thin roti. You need not need a resting time for the dough you can make it on the go but if we leave it for some time also its not bad. Generally a polythene cover can be used if you don’t have a butter paper or a banana leaf. I used a parchment paper as I had it. You should

INGREDIENTS:

Arisi maavu/rice flour – 2 cups
Seeragam/jeera – 11/2 tsp
Finely chopped coriander – 2 tsp
Grated carrots – 1/2 cup
Finely chopped onion – 3/4 cup
Minced green chilli – 11/2 tsp
Salt as needed
Grated coconut – 1/4 cup
Water to make dough

 

METHOD:

1.Take rice flour in a mixing bowl add all the ingredients in the list.
2.By adding little water at a time make a soft ,pliable dough.
3.Let it rest for 5-10 minutes.

4.Take a butter paper or parchment or banana leaf spread some oil
5.Spread the dough evenly as possible.
6.Now heat a dosa pan flip over leave the paper on it.
7.After some time the paper will come off.
8.Now add oil and cook on both sides take out serve with spicy tomato chutney.

Notes

  • If you have omam you can add instead of cumin.
  • The heat for cooking the roti should be correct don’t over cook or undercook the roti.
  • Spread thin as possible so that in cooks fast and texture will also be good.
  • Chop veggies as thin as possible you can grate them so that it becomes easy to spread.
