Mapillai samba /redrice -2 cups
Water – 7 cups
Salt to taste(optional)

1.Wash mappillai samba rice 2-3 times then soak it in water for 6-8 hours or overnight.

2.In the morning use same soaked water and additional water totally 7 cups add it in a pressure cooker and bring to boil by adding salt.
3.When it boils add soaked rice.

4.Close the cooker put on weight and leave it for 4-5 whistles and reduce flame leave for 5 minutes.
5.When pressure subsides open cooker and fluff rice

Notes

  • Soak rice well so that your rice cooks well.
  • If you are doing in open pot then the ratio will be 4:1.
  • If you are running out of time soak rice in hot water for 30 to 1 hour then cook the rice.
  • Don’t discard the soaked rice its very important to cook along with the rice.
  • Soaked rice water has more nutrients.
  • Depending upon the water quality the cooking range may differ.
  • Usually I keep it for 4-5 whistles and bring to low flame for 5 minutes.
