Summers are horrible heat waves are hitting the street with its harsh force and there is no way to escape. Keeping ourselves hydrated and cool is the only thing we can do this summer. The very thought and mention of this word” ice-cream” makes us feel excited with its smooth creamy chillness. Most of us not only kids have an unconditional love for this ice cream each having their own choice of flavours. My choice is vanilla flavour most of the time and next to that I adore butter scotch. I have already made a simple vanilla icecream

that is easy and tasty with condensed milk. But for long time I was planning to make the other method using the stabilisers and milk. Cmc is available at all big stores and its a stabiliser for ice-cream. Gms is for emulsification purpose in ice-cream. Those who have a ice-cream churner make use of it. If you don’t have one you have to beat it at least for 3-4 four times in-between freezing to get a smooth fluffy and creamy ice-cream. It serves as a base ice-cream and we can add any flavour to it. We can even add any nuts,fruits or anything of your own choice.

INGREDIENTS:

Milk powder – 11/2 tbsp/15 gms
Thick milk – half litre/two cups
Sugar – 6 tbsp
Gms powder – 10gms /11/4 tbsp
Cmc powder – a pinch
Fresh cream – 180 gms
Vanilla essense – 11/2 tsp
Corn flour – 1 tsp dissolved in 1 tbsp water

METHOD:

1.Take 100ml of milk first without boiling from half litre and add all dry ingredients gms powder then cmc and finally milk powder mix and beat without lumps.

2.Boil rest of the milk with sugar till it dissolves and let it boil.

3.Now add the beaten up mix to this and stir in low flame after 2 minutes add the corn flour slurry mix well.

4.Its will thicken and coat the spoon.
5.Now switch off the flame filter the content once then add vanilla essence when completely cool add the fresh cream and beat well with a beater and pour in suitable airtight container and freeze for at least 8 hours.
6.In-between freezing take out and beat for 3-4 times like this and freeze.
7.Take out scoop and enjoy.

Notes

Always keep the ice cream in the freezer to set for at least 6-8 hours.
In-between beating the ice cream make the ice cream soft and smooth.
While freezing you can cover with a cling film to prevent crystals formation.
Add the fresh cream only after cooling.
Don’t add gms or cmc powder to hot milk it will form lumps always add it to cold milk and mix.
