INGREDIENTS:

All purpose flour/maida – 21/2 cups / 375 gms
Milk powder – 2tbsp
Salt – 1 tsp
Milk(warm) – 1/2 cup +2tbsp
Castor sugar – 3 tbsp
Butter – 3 tbsp
Some maida for dusting

To proof yeast:

Active dry yeast – 11/2 tsp
Warm water – 1/2 cup
Sugar – 1 tsp

METHOD:

1. Proof the yeast by adding sugar and yeast in a bowl.
2. The water should be warm when finger dipped you should be able to tolerate the heat thats the right temperature to proof yeast.
3. Add this water to the yeast stir once and leave it closed in a warm place for 10-15 minutes or till done.
4. In-between set the other ingredients ready.
5. In a bowl add maida,milk-powder,salt and sugar.
6. Mix it well.
7. When yeast is well risen add this to the maida mix.

8. Stir in with a spoon.
9. Then add in milk little at a time .
10. Now use your hands to mix it will form a very sticky dough.
11. Add butter to this dough and mix till well incorporated.

12. Dust some maida to work area if sticky and keep on stretching the dough for minimum 10-15 minutes.
13. Finally smooth dough will form.
14. Grease a bowl with butter put this dough and close with a damp cloth.
15. Leave it for 1-11/2 hours or till it rises.

16. When it is risen take out in a work surface and punch the air out(again dust some flour if you want).
17. Stretch and pull for 5 minutes.
18. It will become a smooth dough.
19. In-between grease suitable bread loaf tin with butter and keep ready.
20. Flatten the dough with a rolling pin roll and pinch the ends and tuck the sides.
21.Place it in the loaf tin and leave it for second rise for 40 minutes or more than that till it doubles then in-between the oven should be preheated for 10 minutes at 180 degrees.
22. Smear some butter or milk in well risen bread so that it willl brown well when preheated place the loaf and bake for 40 minutes or till done.

Notes

The oven temperature for baking of different baked goods may vary so set correct temperature according to your oven nature.
Proofing and kneading the bread properly is the most needed for a soft and fluffy bread.
Proofing the yeast is the very important if the yeast does not proof then either yeast may be out of date or you have not used warm water.
If the liquid is too hot then yeast will not rise.When you dip in your finger you should be able to sustain the heat.
