INGREDIENTS:
Drumstick leaves/Murungai keerai (dried) – 5 cups(pressed& measured)/50 gms (approx)
Urad dal/ulundhu – 1/2 cup /100gms
Bengal gram /kadala paruppu – 1/4 cup /45gms(approx)
Curry leaves – Handful
Black sesame seeds / Ellu – 1/4 cup/40gms(approx)
Black Pepper/milagu – 2 tsp
Cumin/seeragam – 2 tsp
Red chillies – 15
Asafoetida – 1 tsp
Garlic- 1 head/25 gms
Rock salt/kaluppu as needed
METHOD:


1.First wash Drumstick leaves & drain water completely.
2.Spread this in a cotton cloth for two days in shade.
3.When its readily dried we can prepare the podi.













4.Heat up a kadai add dried drumstick leaves saute in medium flame till it heats up nicely.
5.Transfer & spread seperately on a plate to cool.
6.Add curry leaves & fry till crisp & take out
7.Now add urad dal & roast till golden the flame should be medium low when golden take out.
8.Then add bengal gram dal fry till golden take out.
9.Add cumin seeds & pepper let them pop take out
10.Now add Asafoetida rock salt then red chillies & saute nicely.
11.Add sesame seeds & let then crackle transfer to the plate.
12.Finally add garlic & fry them till the skin gets colour take out & let all the ingredients get completely cool.
13.First add all the other ingredients other than drumstick leaves grind.
14.Now add drumstick leaves & grind to a powder.
15.Now you are ready store it in a airtight container.
16.Serve with rice, idli or dosa with a drizzle of sesame oil.
