A traditional royal falooda ice cream is all I need it should be a basic one not tricky. It will be a most satisfying dessert for this summer will surely keep you full for long with comfort. Only the preparation of all the items takes little time and the most importantly everything should be nicely chilled before assembling. Adding some nuts gives nice texture.But here have not added any you can use badam, cherries, tuttifrutti, pistachios even some kismiss. Milk should be reduced to half and chilled. Making sev from scratch was most satisfying for me but you can use readymade falooda sev from market. Some use wheat based sev which can be boiled, drained and used. If you are not having sev press just use any

plastic bag with a small hole or a piping bag. When squeezing sev into cold water the batter should be hot. I have used agar agar strands to make jelly but powder form is also available nowadays. Gelatine can also be used to make this jelly and adding fruit or any other flavour is all your choice. If you don’t like to add jelly then you can add all natural cut fruits like pineapple, apple, mango or any other of your choice but it should suit the purpose. INGREDIENTS:

For sabja layer:

Sabja/falooda seeds/basil seeds – 11/2 tbsp
Water – 3/4-1 cup

Rose syrup – 1/2 cup or as needed
Milk (chilled) – 1/2 litre reduced to half

For sev:

Corn flour – 1/2 cup
Water – 11/2 cups

Ready made or homemade ice-cream as needed

To make jelly:

Agar agar/kadal paasi – 10 gms
Water -11/2 cups
Red and yellow colouring or even any flavours
Sugar – 4 tbsp(as needed)

METHOD:

For sabja layer:

1.First bloom the sabja seeds by mixing water to it let it set for 20-25 minutes.

2.You can reduce the milk before in hand and keep it chilled.

Making falooda sev:

3.Now take bowl with ice cubes with some water and keep ready.
4.In a heavy pan mix cornflour and water without lumps and switch on the flame keep on stirring till it forms a shiny gelatinous lump.
5.Immediately transfer to a sev press make sev directly in the ice cube water and let it sit there for some time to set.

6. make vanilla ice-cream before in hand and set in freezer or use readymade ice-cream.

Make jelly:

7.In a heavy pan add water and agar agar bring to boil stir till all the contents are dissolved.
8.You can add needed sugar and let it dissolve.
9.Transfer to two different cups add colours or flavours you want mix and keep to set.
10.When set cut and chill keep ready.

Add first layer of sabja seeds then add falooda sev ,rose syrup then jelly, chilled milk and scoop of ice-cream and can shuffle the layers as you want and enjoy.

Notes

Everything should be perfectly chilled before setting the falooda ice-cream.
Amount of all the ingredients added is as per our wish and taste.
We can shuffle the layering part as per our own wish.
I have made jelly using agar agar but you can use gelatin and make jelly or even use a store bought.
If you wish adding nut use it as thin slivers like badam,cherries,kismis and pistachio.
The ingredients that are used to make this falooda like sabja,jelly and sev stays fresh for short time you can’t store it for days so use it fresh within a day itself.
Instead of jelly if you like you can use some sweet cut mango or thin sliced apple ,pineapple slices or any other that would fit.
