masala for poori/poori kilangu masalaAs you may all know potato is one the topmost flexible vegetable used in each and every cuisine around the globe it is fried,mashed and even baked!everything possible is made out of it.In India there are many prominent recipes done with potatoes like aloo tikki,aloo gobi,aloo paratha and the list goes on like an uninterrupted chain.While selecting potatoes buy clean smooth firm potatoes without green discoloration in it,these green colour are toxic and should not be consumed.masala for poori/poori kilangu masalaPotato Masala(poori kilangu masala)done as a side dish for poori is a super hit pair in South-India,it is a default menu in each and every restaurant here.The same masala can be used as a stuffing in dosa and even samosa’s sometimes I add green peas and even carrots to this masala.My poori masala has loads of onions in it as my family loves the dish with some sweetish edge,I don’t add anything to thicken the masala!At-times for a change I make it as a semi gravy so,for that I add gram-flour powder for thickening.

INGREDIENTS:

Onions(big) – 6-8(chopped length wise)
Boiled potatoes – 5-6 (medium)
Green chillies – 2-3(slit)
Curry leaves – some
Ginger – 1 inch piece(chopped or crushed)
Salt to taste,oil – 3-4 tsp,mustard seeds – 2 tsp
Turmeric powder – 3/4 tsp
Chopped coriander leaves some

METHOD:

1.Boil potatoes and mash well add water,turmeric powder and mix.
2.Keep a kadai add oil when heated add mustard seeds.
3.When seeds splutter add curry leaves,onions,ginger and green chillies.
4.Add some salt and saute till translucent.
5.Now add the potato mix.
6.Add let it boil.
7.Check for salt and add,then when it becomes thick switch off add coriander leaves . 8.serve with poori.

  • Ginger - 1 inch piece chopped or crushed
  • Salt to taste
  • Turmeric powder - 3/4 tsp
  • Chopped coriander leaves some
  • oil - 3-4 tsp
  • mustard seeds - 2 tsp

Instructions
 

  • Boil potatoes and mash well add water,turmeric powder and mix.
  • Keep a kadai add oil when heated add mustard seeds.
  • When seeds splutter add curry leaves,onions,ginger and green chillies.
  • Add some salt and saute till translucent.
  • Now add the potato mix.
  • Add let it boil.
  • Check for salt and add,then when it becomes thick switch off add coriander leaves and serve with poori.

Notes

If you want gravy then can add gram flour powder to thicken it and make a gravy.
Even some veggies like carrot,peas can be added.
I usually add more onions to this but its as per your taste you can reduce the amount of onions.
Don't brown the onion cook it till translucent so it will make perfect poori masala.
