For the stuffing I have kept it simple you can add some nuts of your choice it will be more tasty. Use ghee for frying if you like or else fry it in oil like me which will be equally good. INGREDIENTS:

 

For dough:

Ready made rice flour/kozhukattai flour – 1 cup

Ghee – 11/2 tbsp

Salt a good pinch

oil or ghee to fry modak

 

For the stuffing:

Coconut scrapping – 1 cup

Jaggery – 3/4 cup

Cardamom powder – 1/4 tsp

Ghee – 1 tsp

METHOD:

For dough:

1.Take flour in a bowl add salt and ghee mix with finger tips to make bread crumbly texture and when you press it should able to hold shape.
2.Then sprinkle cold water little at a time and make a pliable but stable dough.
3.Don’t knead keep it covered for at least 30 minutes.

For stuffing:

4.Add little ghee in a kadai add coconut and fry for some time.
5.Then add powdered jaggery and combine for some time till all are together then lastly switch off add cardamom powder.
6.And leave it for cooling.

Making fried modak:

7.Knead the dough for few turns then take a portion of dough flatten it and roll with a rolling pin.
8.Then with a circular cutter cut off shapes.
9.Make use of all the dough in the same way but don’t leave dough open it will dry.

10.Take each circular piece keep stuffing pinch the sides as shown and finally gather to form a proper modak.
11.In same way make all the modak and keep ready.
12.In-between heat a kadai with oil.
13.Put modak and fry modak in medium heat till golden take out in a tissue.
14.Serve as neivaidyam and celebrate vinayagar chathurthi.

Notes

You can use half and half maida and wheat flour or even make it with wheat flour alone.
In the stuffing you can add some chopped nuts of your choice.
Some khuskhus and even some sesame seeds can be added in the stuffing.
Don’t knead the dough too much it should be pliable and stable dough so that we can shape it correctly.
Keep the dough closed when working for modak as it may become dry.
You can fry the modak in pure ghee also it will be tasty.
