These eggless muffins recipe is a must try that these are not only easy to make but it tastes delicious. All the wonderful healthy ingredients like oats,dates and also walnuts makes it so special that you have to try it once. I have used instant oats but you can use rolled oats but should be soaked well before baking. Instead of butter if you ask you can replace oil I honestly don’t know about the results as I have not tried it. If your dates are little hard and dry then it should be soaked in hot milk for some time then make a puree. Mine was soft dates so soaked for little time and made it into a puree. Only fill the batter 3/4 th

so that there will be space for muffins to raise.Baking time also may vary according to your oven. Adding raisins are optional you can use even badam or some cashews instead of walnuts. Do try this eggless muffins recipe for sure its delicious soft and crumbly.

INGREDIENTS:

All purpose flour/maida – 115gms
Oats(instant) – 90 gms
Warm milk – 50 ml
Soft dates seeds removed – 25 gm
Unsalted butter – 115 gms
Butter milk – 250 ml
Brown sugar – 100 gms
Baking powder – 1 tsp
Baking soda – 1/2 tsp
Salt – 1/4 tsp
Raisins – few
Walnuts – some to mix and garnish

METHOD:

1.Take dates in a bowl with seeds removed add warm milk and let it sit for 10 minutes then grind it roughly and keep.

2.Now take another mixing bowl with oats and soak it with butter milk and leave it for 45 minutes.

3.Take a mixing bowl add butter and sugar beat till fluffy add dates puree and mix.
4.Sieve all the dry ingredients to this wet mixture and mix don’t over beat.

5.Now add soaked oats mixture also and mix well.
6.Add some chopped walnuts and raisin mix and keep.
7.Line cupcake tray and keep ready preheat oven at190 degrees for 10 minutes.
8.Pour the mixture into cupcake liners add some chopped walnuts and bake for 20 -25 minutes.
9.When skewer inserted comes clean its ready.
10.When cool remove cup cake liners and enjoy.

Notes

  • Every oven has its own temperature differences so bake accordingly.
  • Don’t overbeat the mixture for muffins the batter if little lumpy its ok.
  • Only fill the batter 3/4 th so that there will be space for muffins to raise.
  • Baking time also may vary according to your oven.
  • Adding raisins are optional you can use even badam or some cashews instead of walnuts.
