This Dundee cake is totally eggless alcohol free originated from scotland. They are made during christmas and its a type of fruit cake that is light fluffy and very delicious to eat. As it is a eggless dundee cake I have used orange juice to soak the fruits. Best part is that there is no long soaking hours as done for traditional christmas cake and it tasty too. Specially they use the marmalade from Dandee so the name dandee cake. Dandee is a small port town in scotland. The main ingredients for this cake that gives all the flavour comes from orange zest and the marmalade. Although they use this special type of marmalade. Here I have used a orange marmalade that is available locally. Actually no nuts are

Dundee cake eggless/scottish christmas cakeadded inside the cake only blanched almonds for the topping is used. But I have added some cashews which is optional. Other important ingredients you must never miss to add is sultanas, blackcurrant and orange zest or peel. Without these it will never be called a Dundee cake. Its a special cake from scotland easy to make that too eggless so don’t ever miss to try and give me the feedback.

Dundee cake eggless/scottish christmas cake

INGREDIENTS:

All purpose flour/maida – 112 gm
Almond powder(roughly powdered) – 15 gm
Baking powder – 1/4 tsp
Salt a pinch
Cinnamon powder – a big pinch
Butter(unsalted) – 85 gm
Castor sugar – 85 gm
Curd – 90 gm
Orange juice – 15 ml
Milk – 15 ml
Orange rind – 11/4 tsp
Orange marmalade – 40 gm
Chopped(broken) cashews – 40 gm
Black current – 42 gm
Sultanas – 85 gm
Blanched almonds – 40 gm

TIN USED: 6 inch

METHOD:

1.Line 6 inch tin with parchment both at the bottom and sides after greasing it with butter.
2.Keep ready with all ingredients

3.Take a bowl with sultanas and blackcurrant add warmed up orange juice mix well and keep it for marinate for 20-25 minutes.

4.Take bowl add flour to a sieve with baking powder salt and cinnamon powder mix the sieved flour.

5.To this add almond powder and mix.
6.In-between take a bowl with sugar and butter beat well till fluffy to this add half curd with orange zest and marmalade beat.

7.Add half of the flour and beat.
8.Add rest of the flour to the fruit mixture and mix.
9.Add this to the beaten wet ingredient with broken cashews fold in with a spatula.
10.Now add milk and bring to needed consistency as shown

11.Transfer to the baking tin level it.
12.Now arrange the blanched halved almonds in circular order.
13.In-between preheat oven at 170 degrees for 10 minutes.
14.Place it to the preheated oven bake for 40-45 minutes till skewer inserted comes out clean.
16.Take out and let it Cool for 10 minutes.
17.Remove parchment when cool cut and enjoy.

Notes

  • Oven temperature differs from oven to oven so bake accordingly.
  • The fruits should be soaked at least for 20 minutes and the juice should be warm.
  • I missed showing adding marmalade in the picture and video which is very important so please be noted.
  • Don’t miss to coat fruit in flour so that when baking the fruits it will not sink.
  • The batter for this cake is thick and dropping consistency.
  • I baked it for 15 minutes but time differs  don’t miss to preheat oven before baking.
