lebanese tabbouleh saladSoaring summer heat calls for some eye filling colorful veggies and fruits combined together in salad form but this applies only to persons who really know the intended meaning of the very salads.I mean by saying that only few people love salads and take it seriously understanding its nutritional benefits.The right combination of apt veggies and fruits with suitable dressing makes the salads enjoyable and tasty.The correct combinations of crunch,color and taste makes best celebrated salads around the world.lebanese tabbouleh saladThis is a new type of famous salad I have made!its called Lebanese tabbouleh salad.I totally loved the combination of broken wheat with parsley it was filling and a total taste bud satisfying dish.Somewhere I learnt that the proper authentic Lebanese salad does not cook their wheat they just soak it and add but I was not satisfied by that method so I boiled my dhalia and it tasted fantastic.One of my treasured tarladala’s book had this Lebanese tabbouleh salad with a twist!that she had added lots of orange segments in it.I blindly followed her recipe and as always it has turned out to be a top hit summer salad here in my home!its totally refreshing to have such a salad.

INGREDIENTS:

Broken wheat/Bulgar/dalia – 1 cup
Orange segments – 11/2 cups
Salt to taste
Olive oil – 1 tbsp
Lemon juice – 1 tsp
Parsley 1/2 cup(very finely chopped)
Tomatoes – 1 (chopped small)(only meat portion)
Orange zest – 3/4 tbsp
Onion – 1 small(or use spring onions)
Sugar – 1tsp

METHOD:

1.Wash broken wheat once.
2.Keep a vessel with 11/2 cups of water when it boils add bulgar wheat stir and close the lid.
3.Cook till it becomes tender.
4.Drain and pass it through cold water and keep it ready with all water completely drained.
5.Combine all the other ingredients listed to bulgar wheat.
6.Mix well cover it and keep it in fridge for 1-2 hours.
7.Then serve it chilled.

  • Orange zest - 3/4 tbsp
  • Onion - 1 small or use spring onions
  • Sugar - 1tsp

Instructions
 

  • Wash broken wheat once.
  • Keep a vessel with 11/2 cups of water when it boils add bulgar wheat stir and close the lid.
  • Cook till it becomes tender.
  • Drain and pass it through cold water and keep it ready with all water completely drained.
  • Combine all the other ingredients listed.
  • Mix well cover it and keep it in fridge for 1-2 hours.
  • Then serve it chilled.

Notes

The wheat should be cooked perfectly and water should be drained completely.
Coarser kind of broken wheat is suitable for this salad.
It can stay fresh even for a day and the flavours of-course become intense.
Be careful while grating orange zest as the white part will give bitterness.
