I used to make this puttu not very often but yes whenever my heart calls for it. So,I have a puttu maker already for many years and it’s not at all a tough recipe to make. Usually they have it as breakfast but in our home I make it as mid time snack item.

While making puttu don’t press the flour mixture while stuffing. After steaming the puttu will become dense not fluffy. Ordinary rice flour can be used but it should not be fine but little coarse. It’s an important tip to get soft and fluffy puttu. This puttu’s best accompaniments are banana,appalam even palm jaggery. Don’t steam for too much time the puttu may loose its texture the correct time is when the steam starts coming out of the puttu pot. INGREDIENTS:

Rice flour – 11/2 cups
Salt to taste
Hot water to sprinkle
Coconut grated – 3/4 cup+2 tbsp

METHOD:

1.Take rice flour in a broad vessel add needed salt and 2tbsp of grated coconut and mix thoroughly.
2.Now sprinkle hot water and mix the flour with finger tips without any lumps.
3.Hold some flour with your fist when it holds shape then its the right consistency.
4.Make the flour without any lumps and keep ready.

5.Heat the puttu maker the kudam with water(half filled) and let it boil.
6.In-between place the perforated disc in the puttu maker cylinder and grease it with little oil on all sides.
7.Now first put some grated coconut into the cylinder then the rice flour mixture then again with the grated coconut and close the lid.
8.While stuffing the flour don’t press too much.
9.Now place it on the kudam and when done the steam will come through the cylinder.
10.When done take a plate unmold the puttu by pushing at the back and puttu easily slides down in the plate.
11.Enjoy with kadala curry.

Notes

You can use ordinary rice flour or even readymade puttu flour.
Adding some grated coconut to the rice flour itself is optional.
The consistency of the puttu flour is in the mixing and steaming for a right amount of time.
Best combination for this puttu is kadala curry.
