Making egg kuzhi paniyaram may sound simple and similar as of doing a routine omelette. Mostly I have seen making this egg paniyaran mixing the idli or dosa batter with it. I never tried to make this because I have always tasted it without any adulteration. Just a joke but we keep it simple always only egg not even veggies we add not even tomatoes.It can be a great snack or we can have it as a side dish for simple rasam or whatever.I love it to have it with

simple rasam rather as a snack. At our moms place its so special because of the taste and most Sundays or whenever we think we make it just like that. Even my dad who does not enter the kitchen door even loves to make this egg kuzhi paniyaram all by himself and serve us.After long years am making this muttai paniyaram and just made it for two and enjoyed it a lot. Keep the heat in moderation not high so that the insides also cooks well. Do try this egg kuzhi paniyaram recipe and you will definitely like it for sure.

INGREDIENTS:

Eggs – 2
Finely chopped onions – 3 tbsp
Finely chopped green chillies – 2
Finely chopped coriander leaves – some
Salt to taste
Chilli powder – 1/4 tsp

METHOD:

1.Take eggs in a bowl beat well till fluffy then add chopped onions, coriander,coriander, green chillies, salt and chilli powder and again beat.

2.Meanwhile heat up a kuzhi paniyaram pan add oil to each cup pour these egg batter.
3.Adjust the flame and cook on both sides till done.
4.Serve hot as a side dish for a simple rasam or as a snack.

You can even add some tomatoes and any veggies in grated form or finely chopped so that it cooks fast. For extra taste instead of chilli powder you can add pepper powder.
