watermelon lettuce salad /marudhuskitchenOne of the satisfying and refreshing meal Iam keen on nowadays especially during this summer days are salads! that too my liking to fruit dominant salads is at its peak.Eating salads has many advantages!you are getting a bag full of essential nutrition with less calorie intake and more fibre.More fibre is very essential for a healthy lifestyle of- course each salad is made different(I mean combinations of veggies,fruits and other items). This watermelon lettuce salad is a simple salad but these selected combo of fruits makes all the difference and tastes great when chilled.watermelon lettuce salad /marudhuskitchenAs I have already mentioned in my earlier posts!this scorching summer urges me to make and try different types of salads and it’s always super freshening to have it.There is no exact strict measurements that you should follow while adding combo of fruits!you can change according to your own need.If you want your lettuce to be crunchy soak it in ice cold water for some time before adding it to the salad.I have used country cucumber that is locally available here but you can use normal cucumbers that are available in your area.

INGREDIENTS:
For salad:

Water melon cubed without seeds – 3/4 cup
Orange segments without seeds – 1/2 cup
Grapes(black/green) – 1/4 cup
Lettuce leaves – 1 cup
Cucumber – 1/2 cup(sliced)
Some roasted almonds

For dressing:

Honey – 3 tbsp
Ginger juice – 1 tsp
lemon juice – 1 tsp
Salt and pepper(powder) according to taste

METHOD:
For dressing:

1.Mix honey ginger juice,lemon juice salt and pepper in a bowl and mix.
2.pour it in a closed container and shake well till it is nicely combined.
3.Keep it ready.

For salad:

4.Cut a water melon,make segments with oranges,slice cucumbers and tear some lettuce leaves.
5.combine grapes and roasted badam with above ingredients in a bowl and mix.
6.Chill these in fridge for some time.
7.When about to serve add needed dressing and serve chilled.

Notes

You can always add more of your favorite fruit in greater amount,I mean that the measurement given can be changed according to individual preferences. Keep dressing and salad ingredients separate mix only when serving. Always serve it chilled.
