vangi bath rice recipeBasically any brinjal lover will never give a miss towards this vangi bath rice recipe.From childhood me and my brother don’t have any disliking for any vegetable that’s the great advantage for my mum to cook anything without any restrictions.Iam a big brinjal lover too!have always had a special pleasure having it in any form (variations). vangi bath rice recipeMostly I feel contented having simple stir fried brinjals(kathrikkai poriyal)with plain rice.It has been ages since I had prepared this vangi bath rice recipe even now I remember making it keeping my favourite mallika badrinath’s book by my side.Referring then and there when making it as a newly married new comer girl to the kitchen! I was quite excited about the outcome.Everybody have their own way of preparing this vangi bath according to their own taste preferences.So,after such a long time am making it and its a definite different kind of variety rice from the usual routine tamarind,lemon rice varieties.

vangi bath rice recipe /brinjal rice(bhath)

INGREDIENTS:

Boiled rice – 11/2 cups
Oil -1/2 tbsp
Mustard seeds – 1 tsp
Bengal gram dal/kadala paruppu -1 tbsp
Urad dal/ulutham paruppu – 1 tbsp
Asafoetida – 1/2 tsp
Some curry leaves
Brinjal chopped  (length wise)- 1 cup(soaked in water)
Salt to taste
Turmeric powder – 1 tsp
Vangi bath masala – 4 tbsp or as needed
Ghee for mixing rice – 1 tbsp
Roasted peanuts – 2tbsp
Tamarind extract of small lemon
Some chopped coriander leaves

METHOD:

1.First take extract of Tamarind and keep ready with all ingredients and chopping ready.
2.Keep a kadai with oil add mustard,uraddal and bengal gram dal and let mustard splutter and when dal changes colour add curry leaves with asafoetida.
3.Then add brinjals with salt and turmeric powder,saute nicely.
4.when color of brinjal changes add tamarind water close lid and cook brinjals.
5.When brinjals are cooked add vangi masala and let it simmer for few minutes.
6.Adjust the consistency by adding water.
7.In-between spread the cooked rice in a large bowl by adding ghee to it.
8. Vangi bath paste should be semi gravy consistency to mix up with rice.
9.Switch off.
10.Add vangi bath paste,peanuts and chopped coriander to rice and mix well.
11.Its ready to be eaten with any papadams.

Notes

If you get longer variety brinjals use it.
Use ghee for mixing rice for more flavour.
Adjust adding vangi masala gravy according to taste.
Peanuts can be fried in oil and can be added or simple roasted peanuts is itself enough.
