This is one of my variation of tomato rice that I usually do in my home when i am in a hurry.I remember my amma too making the same type of tomato rice with same taste exactly.As my amma was a busy working women those days these kind of simple recipes came handy and helped her a lot to save time. tomato riceIts a suitable lunch-box item to pack for your children.But,many children will not like the threads of tomatoes in the rice. In that case you can grind the tomatoes and cook instead of chopping. I don’t like to add garlic without chopping,fine chopping makes it to blend with the sauce. You can make the sauce well in advance and store it in fridge. Take out and mix up with boiled rice and use it whenever needed.Do try this easy tomato rice step by step recipe for sure,you will definitely love it.

INGREDIENTS:

Tomatoes – 4-5 medium tomatoes chopped(normal country variety)
Chopped big onions – 2-3 tbsp
Chopped garlic – 1 tbsp(finely)
Salt to taste
Chilli powder/milagai thol – 11/4 tsp
Coriander powder/dhania thool – 1 tsp
Turmeric powder/manjal thool – 1/2 tsp
Some curry leaves
Mustard seeds/kadugu – 1 tsp
Dry red chillies /kaintha milaga – 1-2
Gingelly oil /nallenai – 2 tbsp and some more as needed

 

 

METHOD:

tomato rice 1. Prepare the chopping and ingredients ready.
2.Keep a kadai add gingelly oil and when it heats up add mustard to splutter,then add broken red chillies and curry leaves.

tomato rice3.Then add chopped garlic and let it become golden then add the onions to become translucent.

tomato rice4.Add chilli,turmeric and coriander powder,saute well till rawness of the powder goes away.

tomato ricetomato rice5.Now add tomatoes with needed salt,stir well and close lid(keep the flame medium).

tomato rice6.The water oozes and cooks in its own juices.
7.Open the lid,mash and keep the flame in normal,stir till all the contents dries up and oil oozes.

9.Keep the cooked rice ready mixing up with little gingelly oil to it.
10.Now add the tomato mixture,mix well and serve.

Notes

I have used gingelly oil for this rice to give nice aroma.
You can fine chop tomatoes so that it nicely blends with rice,even you can grind and add if you wish.
I have used normal rice but you can make it with any aromatic rice like basmati or zeeraga samba.
I have added little gingelly oil to cooked rice to get the grains of rice separated and puff up the rice.
