sweet corn sundal(stirfry)Hardly few days more for navarathri and most of the homes who have a custom(practice) to keep kolu(steps arranged in odd numbers to display various toys mainly god and goddesses)have to plan well in advance and naturally they are trained to do it perfectly with so much of do’s and don’t s that should be followed.Both in my dads place and my in-laws place they don’t have a practice to keep kollu in spite of the fact that i have a fondness towards this custom!so,I badly miss experiencing and enjoying this beautiful practice. sweet corn sundal(stirfry)When I was living in Chennai I use to help the neighbor house amma in setting up the kollu padi and arranging the dolls and it is one of my happiest memories that I never want to neglect ! I now really miss those days.Among the vast varieties of sundals I love this sweet corn sundal very much the coconut ,chilli combinations with crunchy-sweet bite of the corn makes it just an awesome snack.Its a very promising evening snack for kids and this sweet corn being magical by itself most of the kids will accept it in any form.Instead of green chillies you can add red chillies also!Usually they add lemon juice for this at the end which gives a beautiful kick you can always add it if you wish will be super tasty.

INGREDIENTS:

Boiled corn (sweet corn) – 1 cup
Green chillies – 1 (chopped)
Salt to taste
Asafoetida/hing – a pinch
Some chopped curry leaves and coriander leaves
Mustard seeds/kadugu – 1 tsp
Urad dhal/black gram – 11/2 tbsp
Coconut grated – 2-3 tbsp
Oil – 1 tsp

METHOD:

1.Steam whole corn in a steamer and peel the corn out of it and keep ready.
2.Keep ready with all the ingredients.
3.Keep kadai add oil and when it heats up add mustard,urad dhal and when it splutters and dhal browns add chopped chilli,hing with chopped leaves(curry and coriander).
4.After that add corn to it with salt and saute for some time and switch off the flame add coconut and mix.

  4. After that add corn to it with salt and saute for some time and switch off the flame add coconut and mix.

Notes

Instead of adding green chillies you can add the red one. In addition to urad dhal you can add chana dhal too. I have not added salt while steaming corn so I have added salt with corn needed for this sundal. You can squeeze some lemon juice at last but I have not added it.
