pidi kozhukattaiUnlike olden days nowadays many extraordinary variations of modaks are made like a revolution!countless and colourful stuffing’s are made and even in pidi kozhukattai’s(dumplings) there are more varieties replacing the main ingredient rice flour with other grains like oats,wheat,millets and many more.Here I have made a sweet dumpling using red poha/aval which is made from red/brown rice.Poha/Aval in general is called as beaten rice or flattened rice.Generally good addition of poha makes that dish not only tasty but it makes the dish wonderfully tender and fluffy like we add little of this(white poha) to idli batter it makes fluffy spongy idli’s even for dosa’s to make spongy dosas(poha dosa).This particular sweet dumpling is excellently tasty that every one will like for its light fluffy texture!will not stop with one.

INGREDIENTS:

Red poha/aval(flattened rice) – 2 cups(soaked for 20 minutes)
Jaggery – 1 cup(crushed)
cardamom powder – 2 tsp
Cashews and pista’s few
Grated coconut – 3/4 -1 cup
Ghee – 2 tbsp,pinch of salt.

METHOD:

1.First soak poha for 20 minutes (wash well before soaking).
2.Squeeze and take in a mixer jar add a pinch of salt and whisk till it is ground(not like a paste but every thing should come together).
3.In-between add jaggery in a pan add very less water say 2-3 tbsp melt it and when melted filter and keep ready.
4.Now roast cashews and pista’s in 2 tbsp of ghee.
5.Grind it keep ready.
6.In same ghee roast coconut nicely and add this to poha with nuts,elachi and mix to form a dough by adding jaggery syrup.
7.When combined make pidi kozhukattai’s in shape by closing the wrist so that fingers are nicely printed to the dough.
8.Make every thing to pidi kozhukattai shape and keep it in a steamer or idli maker and cook for 10 minutes and delicious kozhukattai’s are ready to be served.

Notes

Dont add more water while dissolving jaggery the total recipe will be lost.
Adding nuts is purely optional.
The nuts should not be ground smoothly.
Adding coconut gives a special taste to this kozhukattai.
The same can be substituted using white aval or poha.
