making vegetable soupNowadays am trying out varies possibilities and varieties that can be made from the gluten free stuff millet’s!and one such try is this soup which I made it yesterday and it surprisingly turned out to be a healthy vegetable soup.I enjoyed the nuttiness of the millet’s with every bite and the soup was so refreshing.while making vegetable soup I thought of making it as a clear soup making vegetable soup with little milletso I hadn’t used corn flour for making the soup thicker!Of-course it turned out well.Making vegetable stock is very easy and I have given the recipe for it in my space.I had used vegetable stock which I have made before hand and stored in fridge!you too can do the same as it will be easy and handy when you plan to use it within 2-3 days after which it losses its flavor.

INGREDIENTS:

Little millet/Samai rice – 1/4 cup
Carrots – 2 whole finely chopped
Garlic – 2-3 pieces chopped
Oil – 1tsp
Onion finely chopped – 1
Water as needed
Celery leaves chopped – 1 or 2
coriander leaves chopped – some
Vegetable stock – 2-3 cups
Little butter(optional),Salt to taste and pepper powder as needed

METHOD:

1.Wash the millet and boil the millet with water(2cups approximately).
2.Switch off when done and keep aside.
3.Keep a pan add oil and heat up.
4.Now add garlic and saute,then add onions.
5.Now after few seconds add carrots and saute for 2-3 minutes.
6.When rawness of carrot is gone add boiled millet’s with water,let it boil and  then add vegetable stock.Add Salt and celery when boiling.
7.Let it boil for some time then add coriander,pepper powder and switch off.
8.I have added butter at the end but its optional,Serve hot.

Ingredients

  • Salt to taste
  • pepper powder as needed
  • Little butter(optional)

Instructions

  1. Wash the millet and boil the millet with water(2cups approximately).

  4. Now add garlic and saute,then add onions.

  6. When rawness of carrot is gone add boiled millet's with water,let it boil and then add vegetable stock.Add salt and celery when boiling.
  7. Let it boil for some time then add coriander,pepper powder and switch off.
  8. I have added little butter at the end .(optional)
  9. Serve hot.

Notes

If you have no celery can add coriander instead. Can add little butter before switching off but its optional. You can add any suitable vegetable of your choice like broccoli,cabbage..instead of carrots or in combination. You can add corn flour if you want the soup to be thick,here I have made it as clear soup.
