ladies finger poriyal recipe/vendakai poriyalMany people I know even my fil(father in law) do not like and take ladies finger and has a great disregard towards it from his childhood till date he never made an attempt to try it!but my daughter loves this poriyal very much.She enjoys this vendakai poriyal with a simple sambar or curd rice .She asks me to make it at-least once in a week and my hubby too loves this vegetable!!ladies finger poriyal recipe/vendakai poriyalhe says that during his childhood days he use to have it raw direct from the plant after washing,but I have never tried it raw.Use a heavy bottomed kadai for this as it will stick to the bottom and get burned easily.Should be always near the stove while preparing this ladies finger poriyal recipe/vendakai poriyal.Wash the vegetable thoroughly with water and wipe it without any wetness before cutting the vegetable.If the vegetable is wet then vendakai poriyal will become gooey and soggy.

INGREDIENTS:

Ladies finger/okra/vendakai – 1/2 kg
Small onions – 3/4 cup chopped
Salt to taste
Chilli powder – 1tbsp
Mustard seeds – 1tsp
Coconut scrapings – 3 tbsp
Oil – 2 tbsp

METHOD:

1.Wash the vegetable thoroughly with water and wipe it without any wetness.
2.Chop it and keep ready.
3.Keep a kadai heat with oil add mustard seeds.
4.When it splutters add onions and saute for few minutes.
5.Add the vegetable and stir it nicely.
6.Add salt and now the vegetable will be sticky.
7.Continue to stir till all the stickiness is gone.
8.Now add chilli powder and stir for few more minutes till the rawness of chilli is gone.
9.Now switch off the stove and add grated coconut and give a final stir.
