Moong bean dal widely called as pacha payaru in Tamil is a nutritionally dense pulse especially when in sprouted form has intense health benefits. Sprouted moong beans are rich in protein fibre and other vitamins. I got this sprouted moong cutlet recipe from my close friend here in my place and it’s really a wonderful kids snack with great health quotient. I have done this snack with minor twist by adding some crushed peanuts which will give extra taste and crunch. Many kids will not like to have these sprouts
as salads but as a shallow fried snack it will be a great kick factor for them with crisp bread crumb coating. For making sprouts follow these steps first wash and soak green gram in a vessel for 8 hours or over-night. Then in the morning strain it in a wet cloth and seal it tightly.Leave for 24 hours covering with a vessel upside down at room temperature.Then you will get sprouts, you can keep tied in the cloth for one more day for further more long sprouts. While making sprouts the cloth should be damp enough not too soggy as it will spoil the sprout if there is too much of water. Do try this awesome sprouted moong cutlet snack for sure.

INGREDIENTS :
Sprouted moong dal/pacha payaru – 1cup blanched
Boiled and grated potatoes – 3 tbsp
Ginger garlic paste – 1tbsp
Red chilli powder – 1 tsp
Aniseed powder/sombu – 11/2 tsp
Chat masala powder – 1 tsp
Bread crumbs -1/2 cup or more to roll cutlets
Big onions chopped – 3 tbsp
Bengal gram dal powder/kadala maavu – 4-5 tbsp
Roasted peanuts skin removed – 3 tbsp
Salt as needed
Oil to shallow fry
METHOD:
1.If you want to know how to make sprouts then check here.
2.Blanch sprouts by adding the sprouts to boiling water after few seconds drain and keep(sprouts should not change its colour and crunchiness).
3.Boil potatoes and grate them and keep ready.
4.In a pan fry bengal gram dal powder till nice aroma comes take off and keep.
5.Then saute onions in a pan with little oil and keep.
6.In a mixing bowl mix every ingredient given except peanuts.
7.Grind all this roughly in a mixer and take out in a bowl(don’t add any water).
8.In-between crush the peanuts roughly and add this to this cutlet mixture and make a dough.
9.Spread bread crumbs in a plate.
10.Keep a flat thick pan with oil to shallow fry.
11.Fry cutlets after shaping the dough and coating it with bread crumbs.
12.Cook golden on both sides till nicely done.
13.Enjoy with green chutney, tamarind chutney or tomato sauce.

Notes
You can add even some chopped coriander leaves
to this cutlets.
Coat the cutlet well with bread crumb for crispy and tasty tikki’s.
Adding peanuts is optional.
Chilli powder can be altered according to your taste.
