Yet another Iconic and unavoidable top rated dish of kashmiri cuisine is this kashmiri pulao rice which is not only aromatic but exotic in taste. In each country the very name pulav are differently called and the preparation also differs accordingly. Its a long time pending dish that I was wishing to make and finally I have made one. Totally satisfied by the out come became everybody’s favourite because of its unique texture and satisfying taste. I have missed adding pineapple but if you have sure add it unless you don’t like it. Have added pomegranate and apple which is a must
as a fruit addition. Nuts I have added badam,kismiss and cashews and again forgot adding walnuts again if you have never miss adding it. Another important ingredient is the saffron without which the whole dish becomes purposeless. Combination of both ghee and butter gives the exact rich ness to this whole dish. Have also added fresh cream for the fresh rich taste. Cooking rice should be done perfectly to get the perfect pulav rice. Avoid frequent stirring of the rice while cooking as it will break the rice. Do try this kashmiri pulao rice for sure not only your kids you too will enjoy.
kashmiri pulao rice / nuts veg saffron pulav
INGREDIENTS:
Basmathi rice – 2 cups
Milk – 1/2 cup
Fresh cream – 1/2 cup
Water – 3 cups
Cumin – 1/2 tsp
Fruits(apple,pomegranate) – 1 cup
Nuts(Kismis,cahews,badam) – each 1 tbsp
Onion(small) – 1
Ghee and butter – each 3 tbsp
Bayleaves – 2
Cinnamon – 1 stick(small)
Cloves – 2-3
Cardamom – 2
Salt to taste
METHOD:
1.Soak rice for 15 minutes and drain and saffron in milk for some time.
2.Keep a thick bottomed pan add ghee and butter when it heats up add cumin, bayleaves,cinnamom,cloves,cardamom then add rice and saute it carefully.
3.Add fresh cream and saffron milk with needed water.
4.Now add salt as needed when it starts boiling close the lid and cook.
5.Cook the rice in low flame when all the water has been absorbed.
6.In-between add little ghee and fry the nuts golden and brown the onions separately and keep.
7.Rice when done open the lid add all chopped nuts fruits and onions and gently fluff up the rice carefully.
8.And done serve with any raita.

Notes
Adding cream gives a special taste and creaminess.
I have not added walnut if you have you can add.
Fruits like pineapple gives extra taste and texture you can very well add it.
Nice quality basmati rice gives a nice flavour to this dish.
