INGREDIENTS:

Karuppu ulundhu/black gram dal – 1/3 cup
Pulungal arisi/parboiled rice – 1/2 cup
Pacharisi /raw rice – 1/2 cup
Thuvaram paruppu /toor dal – 1/4 cup
Coconut scraped/thengai – 1/4 cup
Dried red chillies – 5
Cumin/jeeragam – 1 tsp
Milagu/pepper- 11/2 tsp
Salt as needed
Some curry leaves
Small onion – 10
Asafoetida/hing – 1/2 tsp
Ginger a small piece
Oil or butter to make adai

METHOD:

1.Soak black gram dal,pulungal arisi ,pacharisi and toor dal together and let it soak for at least 3-4 hours.

2.First grind small onions, cumin, pepper, coconut, red chillies,hing,ginger,curry leaves in a mixer jar into a rough powder.
3.Then add all the drained and soaked dal to this little at a time and grind to a coarse paste by adding needed water.
4.While grinding itself add salt.
5.Heat a dosa pan and make adai by adding butter or oil.
6.Cook well on both sides and enjoy hot with coconut chutney.

Notes

Soaking dals sufficiently makes the adai tasty.
We can even pour this as dosas by diluting with water if you want.
I have used butter to make adai. Some jaggery or avial will make a great side dish.
For adai the batter should be little coarse.
