iyengar bakery khara bun / eggless masala bun
Everything made in an iyengar bakery is so fresh and that’s the reason these bakeries have become world famous. Here I have tried some eggless masala bun and truly I should say it was too good and addictive. This iyengar bakery khara bun was very easy to make and it was totally worth the try. If you are doing it by hand then kneading and stretching part is a good workout. If you have a stand mixer then your job is totally an easy peasy job and only thing is that you should not over do the dough. When done the dough should be bouncy
and soft after that you can leave it for proofing. I have added milk alone to make the dough but you can use half and half water and milk. I have added turmeric powder but its optional if you don’t like the colour. Right temperature of the liquid is very important in proofing the yeast. The manufacturing date should be checked before using yeast and if its old also it will not proof. If you want more spicy buns just increase the spiciness. Each oven may vary in temperature and baking time so bake accordingly. Do try this iyengar bakery khara bun for sure and you will definitely love it.

Notes
Either yeast may be out of date or you have not used warm water.
If the liquid is too hot then yeast will not rise. When you dip in your finger in the liquid finger should be able to sustain the heat.
Sugar is added along with yeast as yeast will feed on it and rise.
Dough may be sticky but don't care knead well and this will only give a super soft buns.
Mixture of milk and water in equal quantity can be used instead of only milk.
