Its very easy to make with only few ingredients to put it and whats more can you ask to prepare an outstanding dessert. Creamed milk or buffalo milk will be more suitable for making this basundi. More importantly you should stir it then and there so that the out come will be of
correct texture. Adding saffron is all important which takes this dessert to the next level of high standard and quality. I have added cashew nuts and badam you can add even pistachios and chironjis for more variation. The nuts we put should be finely chopped bigger chunks will not be nice for this basundi kind of dessert. I love adding moderate amount of sweetness but you can add even more according to individual taste. Never miss to make this sweet for sure. Lets now see how to prepare basundi at home.
how to prepare basundi at home /marudhuskitchen
INGREDIENTS:
Milk (creamed) – 1 litre
Sugar – 4-5 tbsp
Cardamom powder – 1 tsp
Saffron strands – a pinch
Cashew nuts and badam minced finely – 1/4 cup or even more
METHOD:
1.Take a thick bottomed broad vessel with one litre milk and let it come to a boil.
2.Then reduce it to medium low flame so that it simmers evenly till the milk becomes half the amount.
3.When boiling the milk layers formed should be stirred into the milk so that we get even textured basundi.
4.Now add sugar let it boil till the sugar dissolves then add cashew-badam mix and saffron strands.
5.Let it boil for few minutes now you see the milk has thickened pouring consistency.
6.switch off the stove and add cardamom powder and stir.
7.Serve hot or cold.

Notes
Don’t make the consistency thick it should be pouring consistency.
Adding saffron is a must for this which gives flavour and colour.
You should stir then and there so that the layers formed are evenly textured into basaundi.
