seeded brinjal. As it is a bengali style recipe when we use mustard oil it becomes a top notch recipe by itself. If not even ordinary oil variation can also be used it will be good only. Some use wheat flour I have used rice flour and bengal gram flour combination. Many children even adults will not like brinjals in general. You will not believe that when you serve this they will surely love eating this begun bhaja and ask for more. You can fry it in less oil like adding one or two tbsp that way it will become healthier but you will not loose the taste. Do try this bengali baingan bhaja for sure you will like it.

INGREDIENTS:

Brinjal(large) – 1
Rice flour – 1/2 cup
Bengal gram flour/besan – 2 tbsp
Salt to taste
Turmeric powder – 1 tsp
Red chilli powder -2 tbsp
Mustard oil/ ordinary oil to fry

METHOD:

1.First wash and cut brinjal into discs with 1/4 inch thickness.
2.Mix needed salt and turmeric and set aside for 20 minutes.

3.In a wide vessel add chilli powder, salt and rice flour,besan mix well and keep.

4.In-between heat a pan with little oil to shallow fry.
5.Coat the brinjal one after other in this spice mix till well coated.
6.Shallow fry at medium flame till its golden take out in a tissue sprinkle some chilli powder.

Notes

Sprinkle of sugar will intense the colour and taste if you like add it.
Don’t slice the brinjals thin it should be decently thick.
According to spice level add chilli powder less or more.
Select nice tender variety brinjals without much seeds.
