INGREDIENTS:

Kambu/Pearl millet -100 grams
Ragi/Fingermillet – 200grams
Red rice/sigaparisi – 200grams
Black rice/Kavuni arice – 200grams
Godhumai/wheat -200grams
Javarisi/sago – 100grams
Oats – 100grams
Thinai/Foxtail millet – 100grams
Samai/Little millet – 100grams
Roasted gram/pottukadalai – 100grams
Peanuts/verkadalai – 100grams
Cholam/Sorgam(whiteoryellow) – 100grams
Greengram/pachaipayaru – 100grams
Badam – 50gram
Cashewnuts – 50gram
Cardamom/elakkai – 25 gram
Sukku/Dry ginger powder – 15 gram
Ellu/Sesame seeds – 50gram

If you find it difficult to take in grams then instead of 200grams take 1 cup and make 100grams as 1/2 cup.

METHOD:

1.Dry roast each and every ingredients given separately till nice aroma comes(popping sound should be heard while roasting).
2.Try to segregate two to three ingredients for cooling in plates to avoid sweating.
3.When cool grind it to a fine powder and store.
4.I have powdered it in flour mill as the quantity was more.
5.This ground powder should be spread over a news paper sheet to cool and then transferred to an airtight stainless steel containers.

Making sweet or salt porridge’s:

1.For making sweet or salt kanji take 11/2 tbsp of powder and dilute in a cup of water.
2.Transfer it to a pot and boil nicely without lumps when it becomes thick you can add some milk with it and needed sugar or salt as desired.
3.For the salt version you can add buttermilk instead of milk.

Notes

While grinding make it as fine powder.
I have used dry ginger powder you can use the whole dry ginger.
I have used yellow cholam instead of white or you can use both.
Roasting part should be done nicely for nice quality,taste and the shelf-life also increases.
You can keep fresh for months if stored properly in airtight containers.
You can even add Barley with it.
