Prawn Egg Masala Curry is a delectable dish that combines the tenderness of prawns and the richness of boiled eggs in a flavorful, spicy curry sauce. Mainly cooking time for the prawns is most important. If you cook it for long it becomes hard and rubbery. For medium sized prawns 3-4 minutes is enough and for larger ones it takes about 5-8 minutes. De-veining prawns before cooking prawns become most important thing that you must do.
This cleaning part is quite time consuming but its more inevitable thing that should be done for sure. You can always add or adjust spices, herbs, or ingredients based on your preference to enhance the flavor profile of the prawn gravy Here’s a recipe for Prawn Egg Masala Curry.

Prawn Egg Masala Curry /marudhuskitchen
INGREDIENTS:
Prawns – 800 gms
Eggs boiled – 5(peeled)
Salt to taste
Slit green chillies – 2
Ginger garlic paste – 2 tbsp
Oil – 1/2 cup
Mustard seeds – 1 tbsp
Chilli powder – 5 tsp
Coriander powder – 11/2 tsp
Pepper powder – 1 tsp
Curry powder – 1 tsp
Turmeric powder – 11/2 tsp
Jeera powder – 1 tsp
Sombu powder – 11/2 tsp
Fresh tomato pureed – 3/4 cup
Small onion fine chopped – 1/2 cup
Some curry leaves
Some chopped coriander
Grated coconut(optional) – 1 tbsp
To saute prawns:
Turmeric powder – 2 tsp
Some salt
A tsp of oil
METHOD:
1.Devein prawn wash & keep.To a kadai add little oil add prawns with salt & turmeric saute just for 4-5 minutes take out in a bowl.
2.Heat oil in a pan. Add mustard seeds and let them splutter.
3.Add chopped small onions and curry leaves sauté until they turn golden.
4.Add ginger-garlic paste. Sauté for a couple of minutes until the raw aroma disappears.
5.Add tomato puree and cook until the oil begins to separate from the mixture.
6.Add all the dry spice powders (chilli powder, coriander powder, pepper powder, curry powder, turmeric powder, jeera powder, sombu powder) and salt to taste. Cook the spices for a minute or two add water to make gravy .
7.Now, add slit green chillies,slit eggs add to gravy after few seconds add the marinated prawns to the mixture and cook for about 2 minutes until they are cooked through. Be careful not to overcook the prawns.
8.Add chopped coriander leaves, and grated coconut.
9.Serve the Prawn and Egg Masala Curry hot with steamed rice or any bread of your choice.

Notes
- For medium sized prawns 3-4 minutes is enough and for larger ones it takes about 7-8 minutes.
- You can skip adding curry leaves with onions.
- I have used small onions for flavour and taste you can use regular big onions.
- Clean prawn before cooking the prawns that very important.
