Mint leaves are really versatile as we all use it in many forms in food preparation in our Indian cuisine. However the usage of mint leaves are high in our day today cooking. During summer if we will have it as a drink it will be more refreshing and relaxing. This mint squash recipe is one such drink that can be made in no time at our very own home. We can make in batches and keep it in fridge which will last for more than a week. Add a part of mint squash with two parts of water with some ice cubes and your delightful mint juice is all ready. add citric acid however you can add lemon juice as it is for our use only it will definitely keep well. I have added some ginger and lemon juice to enhance the full josh of the drink. A pinch of salt or even black salt can be added to elevate the taste of the drink. You can replace normal to any sugar form even jaggery can be tried. Select mint leaves which are fresh and deep coloured without wilting. Anyway was not ready to add green colour so just left it naturally. But if you wish you may add one. INGREDIENTS:

Mint leaves – 2 handful
Sugar – 11/4 cups
water – 1cup
Lemon juice – 4 tbsp
Ginger – 2 inch piece

METHOD:

1. First prepare sugar syrup by adding sugar and water till it covers the sugar bring to boil and remove the dirt scum and again boil the syrup for 4-5 minutes.
2. Remove from fire.

3. Take some ginger pieces with some cooled sugar syrup and mint.
4. Blitz to a puree add this to syrup and bring it to boil for few minutes.
5. After that switch off  the stove let it stand for 30 minutes so that all the juices gets incorporated and then add lemon juice.
6. Filter the juice and store it in a sterilized jar after cooling.
7. For preparing the juice add one part of juice with 2 parts of water with some ice cubes and serve.

Notes

Instead of lemon juice you can add citric acid.
Even little salt can be added to elevate the punch.
This keeps well for 10 to fifteen days if kept in refrigerator.
I have not added any colour kept it as it is if you like add some green colour.
Sugar can be replaced with Jaggery.
