This year too I had loads of mangoes different varieties totally overwhelming but there was no resistance from me enjoying the most celebrated fruit. Mangoes are really versatile in certain combinations especially you won’t believe this mango poori is one such recipe. It is filled with wholesome flavour of mangoes and mesmerisingly tasty. Did it with the last batch of mangoes that I got and this years mango stretch is over. Depending upon the type of mangoes the sweetness and flavour also differs. Accordingly you can change the sugar quantity more or less. Always fry the puri at correct heat so that it cooks well. I have not added any cardamom powder or any other flavouring as it is not necessary. You can
even add some saffron strands if you like. This aam ras puri by itself does not need any side dish but you can have it with sweet aamras or some spicy side dish. Instead of maida you can take whole wheat flour and make this puri. Half maida and half wheat flour will also be good. I prefer to taste it hot but after cooling also it tastes good. The consistency of the dough should not be sticky or too tight it should be medium. It can be a best snack item for kids. This mango poori is a very easy recipe to make and relish.

INGREDIENTS:
All purpose flour/maida – 11/4 cup
Mango puree – 1/2 cup
Ghee – 2 tbsp
Sugar – 2 tsp,pinch of salt
Oil to fry,Some powdered sugar for sprinkle(optional)
METHOD:
1.Take mango pieces in a blender blend to a smooth puree.
2. keep it ready.
3.Take a mixing bowl add maida,sugar and ghee mix.
4.Rub to form a bread crumb texture.
5.Now add the mango puree and make a dough that is smooth at the same time stiff.
6.Close with a lid and let it sit for 10 minutes.
7.Knead the dough pinch off small balls make it smooth.
8.Roll it with a rolling pin to circles with medium thickness.
9.Make all the dough in the same way and keep ready.
10. In-between heat oil in a kadai when its hot drop the puris and fry till golden.
11. Take out in a tissue.
12. Sprinkle sugar and serve.

Notes
- For frying puris the oil should be hot enough to cook it perfectly.
- Sugar added can be adjusted according to sweetness.
- Because some mangoes may be less sweet so adjust accordingly.
- Sprinkling sugar is optional.
