Instant Murukku Recipe | How to Make Crispy Murukku Without Grinding Flour
Ingredients:
Rice flour – 1 cup (130 g)
Bengal gram flour (Kadala maavu) – ½ cup (60 g)
Unsalted butter – 2 tbsp
Cumin seeds – 1 tsp
Asafoetida (Hing) – ½ tsp
Pepper powder – 1 tsp
Salt – to taste
Water – as needed
Oil – for deep frying
Method:
1. Sieve rice flour and Bengal gram flour together in a large bowl.


2. Add cumin seeds, hing, salt, mix and add butter. Rub gently with your fingertips until crumbly.







3.Gradually add water and knead into a smooth, soft dough.
4. Mix in pepper powder evenly(forgot to add while mixing flour).
5. Grease the murukku press and fit it with a star nozzle.


6.Heat oil on medium flame.
7. Press murukku directly into hot oil and fry until golden and crispy.
8. Remove once the sizzling sound reduces. Drain on paper towels.
9. Cool completely and store in an airtight container.

Notes
- Don’t overdo the butter — too much will make murukku soft or break easily.
- Keep a damp cloth over the dough while working in batches so it doesn’t dry out.
- If you like sesame seeds, you can add 1 tsp of sesame along with cumin.
- For variation — skip pepper for kid-friendly version or add a pinch of chili powder for extra heat.
