This homemade mushroom soup is the most satisfying soup without any decorative ingredients to put in. The whole some flavours from the mushroom is itself is enough to make you happy and comfortable. Its the exact kalan soup that you would have tasted in the street stalls but a pinch of ajinomoto is always added to give a complete taste. Instead of ajinomoto you can add a pinch of sugar to make it more satisfyingly yummy. Always like to have such type of soups with good amount of pepper without any other to confuse especially when we have cold. You will not believe I love to have this soup with a crunchy element like mixture or kara boondi. But in street style they

add crunchy bits of corn flakes. If you like the soup to be little thick then add cornflour accordingly. Some add chopped onion which gives a nice bite to this soup. I have added garlic paste but instead add some finely chopped garlic it will also be nice. I don’t like to peel the mushroom skin  just wash it nicely wipe it dry and chop it that’s enough. Even though we slice mushroom into thin slices it should have a nice bite when having this soup. Do try this homemade mushroom soup

INGREDIENTS:

Button mushroom – 100 gms
Garlic paste – 11/2 tsp
Salt as per taste
Pepper powder as needed
Cornflour – 4 tsp
Water – 2 cups
Butter – 1 tbsp,some chopped coriander

 

METHOD:

1.Wash mushrooms and wipe off the wetness chop it thinly and keep it.
2.Take bowl with cornflour dilute with 2-3 tbsp of water stir nicely and keep ready.

3.Keep every thing ready keep a thick bottomed pan add in butter when it melts add garlic paste saute add in the chopped mushrooms.
4.Stir in nicely by adding needed salt.
5.Close the lid and keep the flame at medium low for few minutes.

6.Mushroom can cook in its own juices.
7.After few minutes open lid add pepper powder and stir.
8.Add in water and let it boil.
9.In-between check for salt add if necessary.
10.Let it boil for few minutes now add in the diluted cornflour and stir.
11.At one stage the soup will thicken you can switch off the stove add chopped coriander.
12.When serving add some crushed cornflakes its optional.
13. Serve hot.

Notes

  • Slice mushroom into small pieces or slices so that it cooks faster.
  • You can adjust the thickness as you want it to be.
  • You can add finely chopped garlic or even ginger garlic paste.
  • Adding garam masala gives a nice flavour but I have not added here.
  • Even you can add chilli powder if you want it to be more spicy.
