Eggless & Alcohol-Free Christmas Fruit Cake
INGREDIENTS
Dry Ingredients:

Whole wheat flour – 1 cup (150 g, tightly packed)

Cocoa powder – 1 tbsp (7 g)
-
Baking powder – 1 tsp (4 g)
-
Baking soda – ¼ tsp (1 g)
-
Cinnamon powder – ½ tsp (1.5 g)
-
Nutmeg – a pinch
-
Salt – ¼ tsp
Wet Ingredients:
-
Hot water – 1 cup (200 g)
-
Jaggery powder – ¼ cup (50 g)
-
Butter – ⅓ cup (85 g)
-
Condensed milk – ¼ cup (80 g)
-
Aerated soda – ⅓ cup (90 g approx)
-
Lemon juice – 1 tsp
Fruits & Nuts:
-
Dates & orange peel, chopped – 80 g
-
Black & white grapes – 50 g
-
Walnuts – 25 g
-
Almonds & cashews, chopped – 80 g
-
Extra mixed nuts for garnish
METHOD:








1. To 1 cup of hot water add Jaggery powder & dissolve.
2. Now to this add Black & white Grapes, Almond & Cashews chopped , Walnuts, Dates & Orange peel chopped mix Keep aside for 20 minutes.


3. Grease a 8 inch baking tin with butter line with parchment keep ready.










4. In a Mixing bowl add Butter with Condensed milk beat till fluffy & pale.
5. Add in the soaked mix & just combine (It may seem split but its ok).
6. Keep a sieve above the bowl Now add Wheat flour,Cocoa Powder,Baking soda,Baking powder, salt & Cinnamon powder.
7. Add Nutmeg powder Also & Sieve.






8. Fold in the mixture nicely Combine all the butter nicely Into the mixture.
9. Add Lemon Juice and combine.
10. Add Soda little at a time mix.
11. Mixture should be in this consistency.
12. Pour in the lined tin tap it nicely to remove air bubbles.
13. Garnish with some mixed nuts.
14. Bake in a Pre heated Oven @170 deg for 45 minutes.
15. check for doneness when skewer inserted comes clean its done.
16. Close with a damp towel let it cool.
17. Remove parchment, Cut & serve.
18. Soft, rich & moist Christmas fruit cake ready.

Notes
- Add aerated soda only at the end and mix lightly — this gives the cake its moist, fluffy texture.
- Do not overbake; check at 40–45 minutes. Overbaking makes the cake dry.
