Nowadays we get this broccoli vegetable all the day through here in my place and people now know the use of this vegetable because of its high nutritious value. I totally adore the colour of the vegetable and it tastes best when fresh. If you like creamy mild soups then this Broccoli soup recipe will satisfy your expectations. Lets enjoy the goodness before the winter days come to an end. Loved the mildness and creaminess and it was so tasty especially when served hot. This broccoli soup recipe is an indian style soup with a good touch of pepper. You can make this soup thicker or thinner even richer by adding cream and cheese.
I have made it thin as liked by my family members but you can make it thick with more cream. The colour of the broccoli should stay for that we should not boil the soup for too long. If we cook it extremely the taste and flavour will be lost. If you like you can add some grated cheese at the end which will add even more richness You can even blanch some pieces of broccoli to add at the end. I have just added the sautéed veggies at the end. Do try this broccoli soup recipe for sure.

INGREDIENTS:
Broccoli – 1 cup(florets)
Almonds/badam – 1/4 cup
Butter – 1 tbsp
Garlic cloves – 7-8
Green chillies – 2
Onion – sliced(medium size)
Pepper powder – 1tsp
Salt to taste
Fresh cream – 4-5 tbsp or as needed
Boiling water – 2 cups
Some blanched almonds and broccoli for garnishing
METHOD;
1.Wash the florets of broccoli drain and keep.
2.Boil 2 cups water in a pan.
3. Another pan add butter to melt then garlic, green chillies saute .
4.Now add chopped onion saute well with almond and stir add broccoli and combine.
5.Pour in boiling water and let it cook in medium flame without changing colour.
6.Now switch off stove drain vegetables alone and grind it to a puree .
7.Leaving liquid in the pan itself.
8.Pour back the puree to the liquid and bring to a mild boil for few minutes.
10.Salt & pepper can be added now switch off the stove.
11.Garnish with cream and serve.

Notes
- I have made the soup little thin.
- Don't boil the soup for long time the flavour and colour will be lost.
- You can add little sugar to enhance the taste but you can skip.
- Some grated cheese can also be used if you like.
