It has names like bhapa doi ,mishti doi and in other words its a simple sweet curd based pudding. Traditionally they make this by reducing the milk though the ingredients are few it takes much time to make this mishti doi. Usually a small amount of curd to the luke warm milk is added to ferment and that’s how its done. But here is a quick but tasty version of the very same bhapa doi with condensed milk. Its not only easy but tasty with only three ingredients. You can add any nuts of your choice if you like. Badam,
pista or even some dry grapes if you wish but I have not added any and kept it simple. bhapa doi with condensed milk was with mild sweetness and with taste of the curd. The curd added should be hung properly to remove all the water so that we get a perfect bhapa doi. Freshly set curd with less tartness will be good for making this sweet dish. If you want to bake then take water in a tray and place these bowl with pudding cover with aluminium foil and bake it in a preheated oven.
bhapa doi with condensed milk / mishti doi
INGREDIENTS:
Hung curd – 200gms
Condensed milk – 200 gm
Powdered cardamom – 1 tsp
METHOD:
1.Take hung curd in a mixer jar beat well.
2.Then add condensed milk again beat till smooth.
3.Keep ready with ramekin cups or mud pots or even any suitable jar.
4.Then finally add cardamom powder and mix well.
5.Pour this into suitable moulds, cover with aluminium foil.
6.Heat a steamer with water place the cups and cook.
7.It may take 10 minutes to cook.
8.Take out and check with skewer inserted come clean.
9.Leave it fridge for few hours and serve chilled.

Notes
Hung curd is very important.
Drain the curd well without any water.
Curd should not be too tart fresh curd will be better.
To set the mixture it can be microwaved or even baked.
