Homemade Thattai Murukku Recipe – Crispy Thattai

Ingredients
  

  • Ready made Rice flour/Arisi maavu - 2 cups /300 gm

    Pottukadalai maavu/Roasted Bengal gram flour - 1/4 cup/30 gm

    Asafoetida - 1 Tsp

    Butter - 11/2 Tbsp

    Soaked Bengal gram- 11/2 Tbsp

    Salt - 1 tsp

    Some thin chopped curry leaves

    Water for the dough

    Oil for frying

    To Grind:

    Pepper - 11/2 tsp

    Garlic cloves - 6-7

    Red Chillies - 5-6

Method
 

  1. 1.First grind “to grind” ingredients coarsely & keep.
    2.Heat a pan with rice flour & roast in till warm.
    3.Test by taking a pinch of flour and you will be able to draw a line.
    4.Now take rice flour in a mixing bowl with roasted bengal gram flour,Asafoetida,curry leaves,butter,salt,soaked bengal gram,butter.
    5.Mix nicely well combined now add water little at a time make a soft dough.
    6.Make balls & press between greased polythene sheets.
    7.Heat oil in a kadai when oil is hot drop the thattai & reduce it to medium heat 8.Fry till golden when “shh” sound subsides its the right time to take out.
    9.Do it the same way for all the dough.10.Store it in an airtight container & enjoy.

Notes

  • Roast rice flour well on medium flame.
  • Use a soft dough, not too tight.
  • Add butter for extra crispiness.
  • Press Thattai thin and evenly.
  • Keep the dough covered while shaping.
  • Heat oil well, then fry on medium flame.
  • Don’t overcrowd the kadai.
  • Fry until golden brown and sizzling reduces.
  • Cool completely before storing.
  • Store in an airtight container to retain crispness.
