Amazing legume with a brownish tint adds a power packed sharpness by its own. Thinking of loosing weight then use horse gram once in every weak. Sprouted horsegram is particularly rich in protein, dietary fiber, calcium, iron, and phosphorus. Its nutritional value is tripled when it is germinated.Invariably on all the Saturdays my mummy used to prepare this Traditional kollu paruppu thuvayal as a main course for lunch. It will go well with white rice served with few drops of ghee. When we boil sprouted horse gram the water in it can be either ground along with other spices or can be made into rasam which tastes heavenly. This horse gram recipe is one of the traditional and authentic dish in both my mother and in-laws house.
Kollu paruppu is tastier only when we use sprouted gram. You will definitely feel the difference when you do this thuvayal/paruppu. Vadakam used in this recipe is available in all grocery stores which adds extra flavor to it. In our home we use this regularly in our cooking.Those days my Patti used to do this vadakam using small onions once in a year and store me too make the same way and preserve it. Traditional kollu paruppu thuvayal /sprouted horse gram chutney for rice
INGREDIENTS:
Horse gram/kollu/uruli sprouted- 2 cups
green chilles – 2-3
coriander seeds – 2 tbsp
small onions – a fist-full
Vadagam – small bit
salt to taste
For seasoning :
Ghee – 2 tbsp
Vadagam – tiny bit
Mustard seeds – 1 tsp
curry leaves – some
Method:
How to make sprouts:
1.Wash & Soak horse-gram for 6-8 hours then drain.
2.Now add fully drained horse gram into a vessel with lid.
3.Let it sprout for 1 day you can sprout for 2 days for long sprouts.
Sprouted horse gram thuvayal:
1.In a pressure cooker add sprouts with coriander seeds, green chillies,vadagam & small onions.
2.Add water till every thing is immersed add needed salt.
3.Close cooker leaves for many whistles.
4.When sound subsides open cool it completly.
5.Grind this to a thuvayal take out in a vessel.
6.Make tadka with ghee, mustard to splutter ,then vadagam & some curry leaves.
7.Add this to thuvayal mix well.
8.Serve with hot rice with dollop of ghee.

Notes
- Sprouting horsegram increases its nutritional content. The sprouting process activates enzymes, which leads to higher levels of vitamins, minerals, and antioxidants.
- Sprouted horsegram is particularly rich in protein, dietary fiber, calcium, iron, and phosphorus.
- You can add a pinch of hing while making tadka.
- If you are not using ghee then use gingelly oil or any oil.
