Thinai is one the best variant cereal grain that has come to common usage nowadays because of its magnificent health benefits. It is quite filled with large amount of protein and high fibre which makes one full even taken in small quantities. For this reason these millets are the best for the diabetic. Nowadays many make recipes with these millets which is quite appreciable. This time I have tried a snack with this thinai it turned out to be perfect. Thinai murukku is quite easy to make with just a few ingredients. If you are not confident to squeeze directly into oil then make it on a banana leaf or plastic sheet. But when we directly squeeze the shape may be not be
same. For making this thinai murukku I have used bengal dal flour but you can even use urad dal and make this murukku. You can add hot oil or even butter to make this more crisp and tasty. Always fry in medium high heat. When the shh sound disappears that is when you take the murukku out. Instead of cumin you can add ajwain or sesame seeds. Do try with combination of millets but I have not tried it don’t know whether it will turn out good. This thinai murukku is a must try recipe in your list.

Thinai murukku /foxtail millet murukku
INGREDIENTS:
Fox tail millet flour /thinai maavu – 1 cup
Rice flour /Arisi maavu – 1/4 cup
Bengal gram flour/kadala maavu – 1/4 cup
Jeera/seeragam – 1 tsp
Hing/asafoetida – 1/4 tsp
Chilli powder – 1 tsp
Salt as needed
Hot oil/butter – 1 tsp
Oil to fry
METHOD:
1.In a mixing bowl add all the flours with needed salt, chilli powder, hing.
2.Add hot oil to it.
3.Mix by adding water till it forms a loose dough that is not sticky.
4.Heat a kadai with oil.
5.Take murukku press add the needed dough now you can directly squeeze into the oil.
6.Else can press it separately in a banana leaf or plastic sheet and transfer to hot oil.
7.Oil should be at medium high.
8.Fry the murukku’s till shh sound subsudes take out in a tissue.

Notes
- Instead of bengal gram flour you can use urad dal flour or fried gram flour.
- Oil should be at correct temperature to fry the murukku.
- Bit of turmeric can also be added for colour.
- The murukku is ready when the shh sound subsides then you can take out from oil.
