- Rice Flour / Arisi Maavu – 1/4 cup (30 g)
- Salt – as required
- Oil (for batter) – 1 tbsp
- Ginger & Garlic (crushed) – 2 tbsp
- Green Chillies – 2 (sliced)
- Curry Leaves – few
- Coriander Leaves – few (chopped)
- Turmeric Powder – 1/2 tsp
- Chilli Powder – 1½ tsp
- Asafoetida / Hing – 1/2 tsp
- Fennel Seeds / Sombu – 1 tsp
- Oil – for deep frying
Method – Step by Step
Step 1: Prepare the Onions
Add Flavors

1.Add thinly sliced onions to a mixing bowl. Add required salt and mix well using your hands, pressing slightly to release moisture from the onions.
2.Add turmeric powder, chilli powder, hing, fennel seeds, green chillies, curry leaves, coriander leaves, and crushed ginger-garlic. Mix everything evenly.
Step 2: Add Oil & Flours

3. Add 1 tablespoon oil and mix well. Now add besan and rice flour. Mix lightly so that the moisture from the onions coats the flour.
4.Sprinkle very little water only if needed. The mixture should be sticky and firm, not loose or runny.
Step 3: Fry the Pakodas

5.Heat oil in a kadai. Once hot, reduce the flame to medium. Wet your hands, pinch small portions of the mixture, and gently drop them into the oil.
6.Fry on medium heat until golden brown and crispy. Remove and drain on tissue paper.
Step4: Serve Hot

7.Serve the crispy onion pakodas hot with tea or coffee.
