Most befitting travel friendly food here in South Indian houses is the lemon rice I remember my amma making either lemon rice or tamarind rice for picnics we go or even for temple visits.Whether its a tour to distant places or a simple picnic we don’t travel alone as a single family my dear uncle’s family who is my father’s best friend will accompany us and that aunty will prepare either lemon rice or curd rice or tamarind rice/pulisadam,there will be mutual sharing in preparing the dishes and they use to plan this in advance.When its lunch time we use to stop under a road side tree for shade and have our delicious heart warming lunch and continue our journey by cracking jokes and non stop chatting continues right from start till the end !These childhood memories are ever cherishing and really its a treasure to be remembered.One who had tasted Temple lemon rice as prasadam will accept the magical divine taste that is very unique that you will yearn each time you taste it!for me this lemon rice temple prasadham is the best in the whole world. For lemon rice it should be made little tangy so after some time rice will absorb the tangynes all with super good taste.For lemon rice they use to add peanuts or cashews when tempering itself but this time I have roasted cashews separately and added but you can follow the usual method as it is done.

MANGO RICE(RAW MANGO)
RAM PULAO

INGREDIENTS:
Boiled rice – 3 cups
Oil(sesame oil) – 3 tbsp +2 tbsp for rice
Mustard seeds/kadugu – 11/2 tsp
Urad dhal/ulutham paruppu – 2 tbsp
Bengal gram dhal/kadala paruppu – 2 tbsp
Some curry leaves
Green chillies – 2
red chillies – 2-3
Asafoetida – 1 tsp
Turmeric powder – 11/2 tsp
Salt to taste
Lemon juice – 1/4 cup(
according to ones taste)
METHOD:
1.After boiling rice take out in a broad vessel add sesame oil(2tbsp)and salt mix and keep ready.
2.Keep a kadai add oil mustard,urad and bengal gram dhal to hot oil and when seeds splutter,dhals become brown add both chillies,hing and curry leaves.
3.Add turmeric powder mix.
4.Now add some water(2-3 tbsp)and lemon juice with salt, don’t let to boil switch off add rice and mix well(check for salt and add as rice also contains salt).
5.Add roasted cashews and serve.

Notes
After adding lemon juice don't boil it as it will become bitter.
I have added some water along with the lemon juice so that the mixture evenly absorbs and coats the rice evenly.
