Iam mad about saffron its one the spice I adore a lot and of course we use them in many Indian dishes but it was new for me to add it in a cookie.It all happened one fine mid morning day when I was all set to bake an excellent cookie which was bookmarked longtime back from Tarla dalal’s cookbook the most favorite cooking expert of mine.Finally I did the job correctly according to the instructions from the book and my whole space was filled with wonderful aroma of saffron!obviously it was such a simple recipe that every one can do.Just I was preparing a jar to transfer these flavourful crunchy cookies there was a big knock at my door and to my surprise it was my friends(two)over there standing!they were school friends mother for my son and they were long-term intimate close friends for me too.I had a chance to serve them with these biscuits and they loved it a lot and packed some for their kids also it truly brought so much of smile in me.Then again I did the second batch to take photos and give it to my children and hubby.Almonds and pista’s go well with these biscuits giving an excellent crunch and nuttiness to it.While rolling use sheets like polythene or a parchment or even butter paper so that it does not stick.

INGREDIENTS:
All purpose flour/maida – 115 gms /3/4 cup
Sugar – 40 gms/1/4 cup +2 tbsp
Cardamom powder – 1/2 tsp
Ghee – 50 gms/1/4 cup
Some chopped almonds and pistachios
Saffron – few strands
A teaspoon of milk
METHOD:
1.Dissolve saffron in warm milk.
2.Keep everything ready including chopped nuts.
3.Cream ghee and sugar nicely.
4.Then add saffron and cardamom powder mix.
5.Then add flour to it.
6.Make a dough.
7.In between preheat oven at 180 degrees for 10 minutes.
8.Flatten it between two sheets of butter paper or a parchment.
9.Now sprinkle the nuts over it and roll.
10.Then cut to desired shapes.
11.Place the biscuits over a butter paper lined tray and bake for 15 minutes.
12.Cool it before you store.

Notes
Adding nuts is a must which gives the real crunch.
You can use a parchment or a cling film to roll the dough as it would stick without it.
