It’s a different kind of cake I have tried from the ordinary cakes that I usually do.Its different in the sense it quite healthy because its butterless with holy goodness of dates.I have bookmarked this recipe quite long back from milkmaid website.Now only the time have ripened to do this I think ! totally enjoyed the simplicity of this recipe of eggless date cake. If the dates are bit dry and hard you have to boil it in milk.If its soft then you can simply grind the dates with milk directly.This recipe of egggless date cake looks like a piece of bread but believe me its totally moist and nutty. At first I thought of adding lemon juice but at last followed as per the original recipe itself. Usually walnuts are added to this cake but had only almonds in hand so have added it. But,this recipe of eggless date cake turned out to be super tasty. This recipe of eggless date cake is not only simple to make but tastes equally good and its all worth it.

INGREDIENTS:
All purpose flour/maida – 1 cup
Baking powder – 1 tsp
Curd – 1/2 cup
Oil – 1/2 cup
Condensed milk – 1/2 cup
Dates without seeds – 12 to grind and 2 to be chopped
Milk – 1/2 cup
Chopped nuts – 30gm(have taken badam)
METHOD:
1.Grease a loaf pan with oil and dust with maida,keep ready.
2.Take milk in a vessel and boil add the de-seeded dates to it and boil till soft in low flame.
3.Make the date milk mixture to cool.
4.Then in-between sieve maida and baking powder in a vessel,add chopped badam,mix and keep ready.
5.Add cooled milk dates mix in a jar with oil ,milkmaid and curd.
6.Beat well till blended well to a shiny-smooth mixture.
7.Add this to the maida mix and mix thoroughly,lastly add some chopped dates and mix.
8.In-between pre-heat oven for 10 minutes.
9.Bake at 160 degrees for 35 minutes or till the skewer inserted comes out clean.

Notes
You can set the temperature according to your ovens nature.
If the cake browns too fast cover the top with a aluminium or a parchment.
You can use any nuts walnuts and almonds suits best with this cake.
