Thank god these millets are tiny and this becomes a major disadvantage that it cannot be processed and indirectly all the nutritional goodness are passed on to us.Its a born again kind of thing for millets because it was a perfect staple food for our ancestors in general which faded away during a period of time and overtaken by polished varieties of grains.Because of health awareness nowadays millets have gained momentum and as might be expected its versatility is well understood and experienced more now.Instead of vanilla essence you can use cardamom powder and you can use regular sugar as I have used light brown sugar.While forming the dough you can sprinkle some milk if it doesn’t come together.Its always hard to roll the dough normally so spread some flour dusting so that you can roll it easily.As I always say the baking time differs from oven to oven so adjust accordingly and bake.The butter should be cold enough so that we can mix up with hands to bread crumb texture if the butter is too soft it’s not going to work.

INGREDIENTS:
Ragi flour/finger millet – 1/2 cup
Wheat flour/gothumai maavu – 1/2 cup
Butter(cold) – 1/2 cup
Light brown sugar/regular sugar(powdered) – 1/2 cup
Baking powder – 1 tsp
Vanilla essence 1 tsp
METHOD:
1.Take a bowl sieve in wheat,ragi flour with baking powder added.
2.Mix up flour with butter with hands to look like bread crumbs.
3.Now to this add powdered sugar and vanilla essence .
4.Mix it to form a dough.
5.Knead it well till it forms a nice dough.
6.Pre-heat oven at 180 degrees for 10 minutes.
7.Take the dough flatten it with hand or roll it using rolling-pin by dusting some flour.
8.Cut into desired shapes.
9.Take out the shapes carefully by using a sharp flat knife to pass underneath and arrange it in a baking plate which is layered with butter paper.
10.Bake it for 12-15 minutes.
