This paste can be stored in the fridge . For 1/4 kg of tamarind,water added should immerse the tamarind completely.If we have this paste handy ,it can be used for countless dishes.Although process of straining and boiling takes time ,it is worth doing as it is more economical compare to store bought .Always use dry spoon for scooping out.It can easily be added according to the demand that each recipe has and there is no waste.Puli Paste /Tamarind paste /tamarind concentrate

It saves money and time.It makes the cooking procedure more easy.It keeps well in the fridge for 1-11/2 months and if you wish to keep it longer,it can be kept in the freezer or poured in a ice-cube tray which is easy to use.I don’t add add any oil, salt or turmeric. It keeps well as it is.

Ingredients
  

  • Tamarind - 250gms
  • water as needed

Instructions
 

  • Take water to soak tamarind completely .
  • Bring to boil
  • after a while (usually 10-15 min)
  • switch off the stove
  • Let it cool and grind the mixture
  • filter it using strainer,
  • Bring to boil
  • let it go till it comes to a semisolid consistency.
  • cool the mixture and store.
