peanuts masala recipe/how to make masala kadalaiI love(d) to spend most of my weekends at my grandmother’s home(mum’s place),we children as group will be playing!!in the evening my grandfather would buy(now and then,not always) some masala peanuts,each one would have their own share!!those golden moments are highly priced and never come back. peanuts masala recipe/how to make masala kadalaiNot you and me most of us are addictive towards this peanuts masala,a perfect tea time crunchy snack.Majority of sweet shops even grocery shops sell these peanuts masala and if am not missing its common at all tea stalls here!!For peanuts masala recipe many commercial preparations use roasted peanuts with skin, but personally am convinced without skin.Peanuts along with skin tastes great but for me its little bitter!!so I prefer skinless roasted peanuts.

INGREDIENTS:

Roasted peanuts(skinned out) – 1 cup
Gram flour/kadala mavu – 31/2tbsp
Rice flour – 21/2 tbsp
Salt as required
Chilli powder – 2 tsp
Asafoetida – 1/4 tsp
Garlic minced – 3-4 pods(with skin)
Curry leaves -few

METHOD:

1.Add gram flour/kadala mavu,rice flour,salt,chilli powder,asafoetida in a bowl and mix well Then add minced garlic and groundnuts mix well.
2.In-between heat the kadai with oil.
3.Fry curry leaves in it and keep aside.
4.Add water little by little and make a sticky dry mixture to coat the peanuts.
5.Sprinkle the batter into oil.
6.Fry in medium flame.
7.Take out in a tissue,mix both curry leaves and peanuts .

  • Garlic minced - 3-4 pods with skin
  • Curry leaves -few

Instructions
 

  • Add gram flour/kadala mavu,rice flour,salt,chilli powder,asafoetida in a bowl and mix well Then add minced garlic and groundnuts mix well.
  • In-between heat the kadai with oil.
  • Fry curry leaves in it and keep aside.
  • Add water little by little and make a sticky dry mixture to coat the peanuts.
  • Sprinkle the batter into oil.
  • Fry in medium flame.
  • Take out in a tissue,mix both curry leaves and peanuts .

Notes

Should be fried over a medium flame,slight color change spoils the taste.
Add water little by little and make a sticky dry mixture to coat the peanuts.
If you prefer can add amchur powder for more punch.

    I use the same method but I bake the peanuts.. Tastes delicious. This fried version looks so crispy, gotta try sometime..
