This Paneer rice is a delicious and flavorful one pot lunch & an easy lunch box recipe made with paneer (Indian cottage cheese) and rice. It’s a popular vegetarian dish that combines the rich and creamy texture of paneer with aromatic spices and flavours.This Paneer rice is very easy to make it takes no time to make involves only simple ingredients available at home. After making the rice leave the rice to set so that all the flavours imbibe well & it tastes excellent. Ghee (clarified butter) or butter imparts a rich flavor to any variety rice. You can use them in combination with a neutral oil. A touch of lemon or lime zest or a squeeze of citrus juice at the end

Paneer rice / easy paneer pulao recipe / easy one pot lunch / lunch box recipe
INGREDIENTS:
Paneer – 1 cup
Par boiled rice/puzhungal rice(cooked) – 2 cups
Finely chopped onion – 1/2 cup
Ghee/oil – 4-5 tbsp
Sombu/fennel seeds – 1 tsp
Tomatoes minced – 2(medium)
Salt as per need
Chilli powder – 1/2 -1 tsp
Garam masala powder – 11/2 tbsp
Turmeric powder – 1/2 tsp
Ginger garlic paste – 11/2 tbsp
Some mint leaves
Some coriander leaves
Lemon juice – 1 tsp(optional)
METHOD:
1.Take 2 cups of cooked rice fluff up & keep ready.
2.Heat a kadai add ghee when it heats up add fennel seeds to splutter.
3.Add finely chopped onion to become translucent.
4.Now add ginger garlic paste cook till rawness goes off.
5.Add minced tomatoes with some salt needed for gravy alone.
6.Saute for some time add turmeric powder, chilli powder & garam masala.
7.Fry nicely when done add 3/4 cup water let it boil.
8.Add some mint leaves & coriander leaves.
9.When it bubbles add cut paneer gently mix close with lid.
10.Let the gravy cook with paneer for 2-3 minutes in medium flame.
11.Open add rice mix it add needed salt for rice.
12.Mix it well without breaking the paneer pieces.
13.Lastly add lemon juice(optional) & mix well.
14.Tasty lunch box paneer rice is ready.

Notes
- After making the rice leave the rice to set so that all the flavours imbibe well & it tastes excellent.
- Let the paneer simmer with gravy for some time so that all the juices from gravy will get into paneer.
- Mix the rice gently with paneer otherwise paneer pieces will crumble.
- You can use both store bought or home-made paneer.
- Adding lemon juice is optional.
