Paneer is so inevitable in Indian cuisine and its so versatile that it can be made both into a savoury or a sweet. As such this paneer has no taste by itself and thats the reason its vastly used in many dishes. Even at home it can be easily made but store bought can also be used and they are more firmer. Commercially they use both cows milk and buffalo milk to make this paneer to become more firmer. At home we can make firm type of cheese by pressing and draining for long hours. I have made this paneer 65 recipe dry its very easy to make and absolutely will become a addictive snack for all age groups. I have added both curd and lemon juice for marination you can
add lemon juice alone and skip curd. If you are using store bought there may be some whey water so thoroughly wipe off and then marinate. Adjust spice level according to your taste. Always keep the flame at medium while frying so that it does not burn. I have added chopped curry leaves to the batter itself so that it becomes more flavourful. INGREDIENTS:
Paneer – 200 gms
First marinate:
Salt to taste
chilli powder – 2 tsp
Turmeric powder -1/2 tsp
Garam masala powder – 2 tsp
Ginger garlic paste – 2 tsp
Lemon juice – 1 tsp
Some chopped curry leaves
Second marinate:
Cornflour – 2 tbsp
All purpose flour – 1 tbsp
Rice flour – 2 tbsp
Curd – 2 tsp
METHOD:
1.Cut paneer into cubes add salt , ginger garlic paste,lemon juice,turmeric powder, chilli powder,garam masala, curry leaves mix with light hands.
2.Let this marinate for 10-15 minutes.
3.Now heat up a kadai with oil.
4.To the marinate add cornflour, maida and rice flour with curd and mix up gently till the paneer is well coated.
5.Sprinkle some water and mix.
6.When the oil is hot keep it to medium add paneer pieces one by one and fry till golden.
7.Fry some more curry leaves in hot oil for garnish.
8.Take out in a tissue and serve hot with some more fried curry leaves.

Notes
- Adding curry leaves is optional.
- Be gentle when mixing paneer it tends to break easily.
- If you don’t want to add both lemon juice and curd you can add any one of it.
- You can use water itself instead of adding curd.
- Fry at medium flame not in high flame.
- After switching off the stove fry curry leaves.
