For setting this type of jelly you should keep in fridge and does not set in normal temperature.Each year artificially ripened mangoes are being seized and this still continuous without an end.While choosing mangoes go in for raw one and we can ripen it at home itself,its more safe. Using hay straws to ripen is the best and if not available you can use uncooked rice to ripen the mangoes. You can even roll each mango in a newspaper the next best way to ripen it. When using gelatin the jelly is stable only when its cool and after taking out you should consume it as soon as possible. INGREDIENTS:
Mango puree(from fresh fruit) – 1 cup
Sugar – 1/4 cup
Gelatin – 1 tbsp
Water – 1/4 cup
METHOD:
1.Add gelatin in a cup to that add the 1/4 cup water and mix well and let them dissolve for 5 minutes.
2.Make mango puree from the mangoes measure and keep.
3.Add this to mixer jar with sugar and grind this to a smooth puree without any lumps.
Remove this in a bowl and keep.
4.Now add gelatine mixture to a pan heat up till it makes a clear solution.
5.Add this clear liquid to the mango puree and beat well to combine nicely,then switch off and mix lemon juice with it and stir well.
6.In-between you can grease the suitable molds with very little oil and keep.
7.Pour this to suitable molds to set.
8.Refrigerate till it sets or leave overnight.

Notes
You can use sugar according to taste depending upon mango sweetness.
This jelly should be refrigerated and does not set on its own like agar-agar.
